Clean Eating by Katie 02: Chocolate Chip Cookies | Gluten Free and easily made Dairy Free

Who doesn’t like cookies? I mean cookies are amazing you can dip them in your coffee or even use them as buns and have an ice cream ( or coconut ice cream filling) so here are my reformed ‘chocolate chip cookies’ literally delicious… and not too  bad for you, they’re GF and can be DF if you sub the butter for nut butter!

Katie’s Choc Chip cookies

1 ¼ cups of Almond flour

¾ cups of shredded coconut

1 tsp of baking powder

½ cup butter (softened)

½ cup of natural ‘sweetener’

½ tsp vanilla extract

1 large egg

½ tsp salt

Half a cup of ‘sugar free’ or no sugar added chocolate chips

Directions

Heat oven to 160 degrees, line a baking tray with baking paper – you know the drill.

Whisk almond, coconut, baking powder, salt together

Then mix all wet ingredients together- combine to form a dough and add in chocolate chips.

Shape into 1 inch balls and place 2 inches apart – Squash down the balls with a fork,

Bake 12-14 mins they will be squishy when they come out – let cool on a wire rack.
